The Pen of 3 Commercial Carcass Evaluation is bringing real-world performance data to sheep producers at the Wisconsin Sheep & Wool Festival. The event, Sep. 11-13, offers an opportunity to measure carcass quality, yield, and profitability.
The Pen of 3 program allows producers to enter three market lambs as a single group. These lambs are evaluated not only on live appearance and structural correctness, but on carcass merit following harvest. Data collected may include hot carcass weight, dressing percentage, ribeye area, backfat thickness, yield grade, and quality grade.
By combining live evaluation with carcass measurements, the program provides a complete picture of how genetics and management translate into end-product value.
Unlike traditional show ring competitions that reward visual appeal, the Pen of 3 emphasizes measurable performance traits that directly impact consumer satisfaction and producer profitability. The program mirrors commercial production realities, focusing on the characteristics that packers and buyers prioritize: muscling, appropriate finish, and efficient growth.
