Little John’s To Reduce Food Waste

Little John’s — a community kitchen located in Fitchburg — is on a mission to take grocer food excess and transform it into chef-quality meals for all, regardless of their means, according to owner Chef Dave Heide. Since October of 2020 Little John’s, in partnership with Metcalfe’s Market, has rescued 46 tons of food that would have otherwise landed up in landfills.

Heide recently caught up with the Mid-West Farm Report at Dinner in Dane, where he prepared and served a coursed meal in celebration of the Alice in Dairyland program’s 75th anniversary.

Heide’s restaurants have always been farm-to-table. He’s supported over 92 different farms since opening. Currently, he’s building out a 25,000-square-foot commissary in Fitchburg. He’s in the process of raising $6 million to complete the project. With that, he hopes to end food insecurity in Dane County.
