Good Year For Blue Corn

Blue corn? Yes! Blue is one of the four colors of corn varieties. And its grown here in southern Wisconsin despite its Southwest heritage.

Blue Farm brand tortilla chips are produced and distributed by Randy Hughes and his family of A-Maize-ing Corn Products in Janesville. Randy is a fifth generation farmer. Hughes says the chips are a value-added product to his organic cropping system.

He notes that his blue corn offers a more robust corn flavor not found in other chips. And its a local food options, which has been growing popularity — especially during the pandemic. However, COVID-19 has lent some challenges, such as workforce strains and shipping delays. Hughes says they’ve been able to plan well enough ahead to avoid the repercussions of those challenges.

In addition to blue corn, the Hughes Farm also grows soybeans and small grains.
