October is National Pork Month. It’s a time to highlight the dedication of Wisconsin farmers and the delicious, nutritious pork they provide. Christina Meylor, President of the Wisconsin Pork Association and a pork producer herself, operates Burgett Farms near Darlington, Wisconsin. The family farm began in 1967 with just 20 pigs and has since grown to manage 1,500 sows, producing 50,000 weaned pigs annually. “We pride ourselves on animal husbandry, efficiency, sustainability, and a welcoming family-oriented atmosphere,” she shared.
Historically, October marks the time when pigs raised in the spring and summer were ready for market, which is why the month has become synonymous with pork. “While we promote pork year-round, October allows us to focus on generating excitement about our industry,” Meylor explained.
Wisconsin pork is versatile and flavorful, with cuts like pork sirloin and tenderloin garnering attention for their quality. The Wisconsin Pork Association website features recipes, offering consumers creative ways to enjoy pork while emphasizing safe cooking temperatures of 145 degrees.
In response to challenges faced during the COVID-19 pandemic, the Wisconsin Pork Association launched the “Wisconsin Raised” campaign. This initiative connects farmers with local food banks, ensuring that pork reaches communities in need while promoting locally sourced products. “Everyone wants something that is locally raised these days,” Meylor noted.
Additionally, Meylor discussed the proactive measures Wisconsin pork producers are taking to address misinformation about the industry. “We take guidance from our national organizations to ensure we communicate the positive practices on our farms,” she stated. “Our farmer-led initiatives prioritize animal welfare and sustainability, and we want to share these stories with the public.”
